Spinach Cornbread

Ingredients

  • 1 (81/2 ounce) box jiffy cornbread mix
  • 1 (10 ounce) package frozen spinach (thawed & squeeze out juice)
  • 4 eggs
  • 6 ounce cottage cheese
  • 1 onion (finely chopped)
  • 1/4 cup melted butter or margarine 1/2 tsp salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix all ingredients together.
  3. Pour into greased 9×9 baking pan. Bake for 30-50 minutes, until done.
