Night Before Breakfast Sausage

Ingredients

  • 1 pound mild sausage or chopped ham
  • 4 slices bread, cubed
  • 6 eggs
  • 1 cup grated sharp cheddar cheese
  • 2 cups milk

Instructions

  1. Arrange cubed bread in bottom of a greased 9×13 baking dish.
  2. Place sausage over bread and sprinkle with cheese.
  3. Beat eggs and milk together and pour over bread, sausage and cheese.
  4. Refrigerate over night.
  5. In the morning: Preheat oven to 350 degrees.
  6. Bake for 45 minutes or until done.

Cooking time (duration): 45 Minutes

Bake Blueberry French Toast

Ingredients

  • 1 loaf Italian bread
  • 1/2 cup sugar
  • 4 eggs
  • 1 tsp cinnamon
  • 1/2 cup milk
  • 1 tsp cornstarch
  • 1/4 tsp baking powder
  • 1 tbsp butter, melted
  • 1 tsp vanilla
  • 1/4 cup powdered sugar
  • 2 1/2 cups blueberries ( 2 containers)

Instructions

  1. Slice the bread diagonally to create 8 3/4 in thick slices, heels removed.
  2. Arrange bread slices in 9×13 baking dish.
  3. Whip eggs, milk, baking powder and vanilla in medium bowl.
  4. Slowly pour mixture over bread, turning each slice to coat completely. Cover and refrigerate overnight.
  5. In he morning: Preheat oven to 425 degrees.
  6. Coat another 9×13 baking dish with vegetable spray.
  7. Sprinkle blueberries over bottom of pan.
  8. Mix together sugar,cinnamon and cornstarch and pour evenly over blueberries.
  9. Tightly wedge the bread slices over the blueberries, wettest side up. Brush the bread with melted butter.
  10. Bake for 20-25 minutes or until golden brown.

Quick Notes

To serve:  Place the toast berry side down.  Stir the remaining berry mixture in the baking dish and scoop over the toast.  Sprinkle with powered sugar.  This is a favorite at my house.
