Eggplant Casserole

  • 1 large eggplant
  • 1 medium onion
  • 1 box cornbread stuffing
  • 1 lb hamburger
  • Cheddar Cheese (or cheese of your choice)
  1. Preheat oven to 350°
  2. Grease a 2 qt. casserole dish.
  3. Peel and cube eggplant.
  4. Chop onion.
  5. Cook eggplant and onion in boiling water until tender, drain.
  6. Brown hamburger, drain off fat.
  7. Prepare cornbread stuffing according to directions.
  8. Combine all ingredients and put in casserole dish and top with cheese.
  9. Bake for 20 minutes or until cheese melts.
