Baked Parmesan Crusted Chicken

Ingredients

  • 1 cup and 2 tbsp butter
  • 3 cloves garlic, minced
  • 1-1/2 cups dry bread crumbs
  • 1/2 cup Parmesan cheese
  • 3 tbsp thyme
  • 3 tbsp basil
  • 3 tbsp oregano
  • 1/4 pepper
  • 3/4 tsp salt
  • 9 (4 ounce) skinless, boneless chicken breast

Instructions

  1. Preheat oven to 350 degrees.
  2. Melt the butter with garlic in a saucepan over medium heat. When the butter starts to bubble, remove from the heat and allow to cool slightly.
  3. Stir the breadcrumb together with the Parmesan cheese, thyme, basil, oregano, pepper and salt.
  4. Dip the chicken breasts in the butter, then press into the seasoned bread crumbs. Place the chicken into a 9×13 inch baking pan.
  5. Bake 50 to 55 minutes or until done and golden brown.

Quick Notes

Can drizzle some butter over chicken before baking or pour extra butter into baking dish to make edges supper crispy.

Caramelized Baked Chicken Legs

Ingredients

  • 6 drumsticks or more
  • 1 tbsp and 2 tsp olive oil
  • 1/2 cup soy sauce
  • 1 tbsp and 2 tsp ketchup
  • 2/3 cup honey
  • 3 minced garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix together all the ingredients cover and marinate for 2 hours or overnight.
  3. Put the entire mixture, with the chicken and marinade into a 9×13 baking dish.
  4. Bake for 1 hour or until the sauce is caramelized.

Grilled Chicken

Ingredients

  • 2 garlic cloves, minced
  • 1 tbsp basil
  • 1/2 tsp pepper
  • 4 Boneless chicken breast
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tbsp brown sugar

Instructions

  1. In a small bowl, combine garlic, basil, and pepper; rub all over chicken breast.
  2. In a large shallow dish, blend together oil, soy sauce, lemon juice and brown sugar. Add the chicken breasts and turn to coat.
  3. Cover and marinated in the refrigerator for at least 2 hours.
  4. Remove chicken from marinade; discard marinade.
  5. Spray grill with cooking spray and preheat to medium.
  6. Add chicken breasts and grill for 5 to 8 minutes. Turn and continue to grill for another 5 to 8 minutes or until cooked through.

Quick Notes

Can be served as a main dish with sides or as a grilled sandwich.

Chicken Pasta Salad With Cucumber

Ingredients

  • I cup uncooked macaroni
  • 3/4 cup mayonnaise
  • 1 tbsp onion, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups cooked chicken, chopped
  • 1 cup peeled chopped cucumber
  • 1 rib celery, chopped

Instructions

  1. Cook macaroni according to package directions.
  2. Combine mayonnaise, onion, salt and pepper in bowl; mix well.
  3. Add warm macaroni, chicken, celery, and cucumber; mix gently.
  4. Chilled covered, for 2 hours or longer

Variations

Can add other spices/ingredients. I added roasted red pepper to give it more color and a bolder taste

Crock Pot Chicken Thighs

Ingredients

  • 1 can cream of chicken soup
  • 1/2 cup water
  • 1/2 cup chopped onions
  • 1 tsp paprika
  • 1 tsp lemon juice
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1/4 tsp pepper
  • 4 chicken thighs

Instructions

  1. Spray crock pot with non stick spray.
  2. Place chicken thighs in crock pot.
  3. Mix all ingredients and pour over chicken thighs.
  4. 4 Cook on low for 6-8 hours
