Baked Parmesan Crusted Chicken

Ingredients

  • 1 cup and 2 tbsp butter
  • 3 cloves garlic, minced
  • 1-1/2 cups dry bread crumbs
  • 1/2 cup Parmesan cheese
  • 3 tbsp thyme
  • 3 tbsp basil
  • 3 tbsp oregano
  • 1/4 pepper
  • 3/4 tsp salt
  • 9 (4 ounce) skinless, boneless chicken breast

Instructions

  1. Preheat oven to 350 degrees.
  2. Melt the butter with garlic in a saucepan over medium heat. When the butter starts to bubble, remove from the heat and allow to cool slightly.
  3. Stir the breadcrumb together with the Parmesan cheese, thyme, basil, oregano, pepper and salt.
  4. Dip the chicken breasts in the butter, then press into the seasoned bread crumbs. Place the chicken into a 9×13 inch baking pan.
  5. Bake 50 to 55 minutes or until done and golden brown.

Quick Notes

Can drizzle some butter over chicken before baking or pour extra butter into baking dish to make edges supper crispy.

Baked Ham Steak With Pineapple

Ingredients

  • 1/2 pound ham steak
  • 1 can pineapple rings
  • Brown sugar
  • Cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Place ham steak in a shallow pan and place the pineapple slices on top.
  3. Pour the pineapple juice over all.
  4. Bake for 20 minutes uncovered.
  5. After 20 minutes, remove pan from the oven and turn the oven up to broil.
  6. Baste the ham with the pan juices.  Sprinkle a little brown sugar over the pineapple slice and dust with cinnamon.
  7. Return to oven and broil 3 to 5 minutes or until the pineapple is lightly browned.
  8. Serve each ham steak with a pineapple slice.

Cooking time (duration): 40 to 45 minutes

Grilled Chicken

Ingredients

  • 2 garlic cloves, minced
  • 1 tbsp basil
  • 1/2 tsp pepper
  • 4 Boneless chicken breast
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tbsp brown sugar

Instructions

  1. In a small bowl, combine garlic, basil, and pepper; rub all over chicken breast.
  2. In a large shallow dish, blend together oil, soy sauce, lemon juice and brown sugar. Add the chicken breasts and turn to coat.
  3. Cover and marinated in the refrigerator for at least 2 hours.
  4. Remove chicken from marinade; discard marinade.
  5. Spray grill with cooking spray and preheat to medium.
  6. Add chicken breasts and grill for 5 to 8 minutes. Turn and continue to grill for another 5 to 8 minutes or until cooked through.

Quick Notes

Can be served as a main dish with sides or as a grilled sandwich.

Zucchini Meat Loaf

Ingredients

  • 2 eggs slightly beaten
  • 2 cups shredded zucchini, (1 large or 2 small)
  • 1/3 cup bread crumbs
  • 1/3 cup chopped onion
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp oregano
  • 1 1/2 pounds ground beef
  • Toppings:
  • 1 tbsp packed brown sugar
  • 2 tbsp ketchup
  • 1/2 tsp yellow mustard

Directions:

1   Preheat oven to 350 degrees.

2  In a large bowl, mix all meat loaf ingredients until well blended.

3  Press mixture into ungreased 91/2 inch deep dish glass pie plate.

4  Bake for 35 minutes.

5. Will meatloaf is cooking, mix all topping ingredients.

6  Remove meat loaf from oven; pour off drippings.

7  Spread topping over meatloaf. 8 Return to oven; bake 10 to 15 minutes longer or until thoroughly cooked in center.

Variations

I added some minced garlic and worcestershire sauce for more favor.

Beef Stroganoff

Ingredients

  • 2 pounds stew beef
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 4 ounces butter
  • 4 green onions, sliced (white parts only)
  • 4 tbsp all purpose flour
  • 1 can beef broth
  • 1 tsp prepared mustard
  • 1 tbsp worcestershire sauce
  • 2 garlic gloves
  • 1 (6 ounce) can sliced mushrooms drained
  • 1/3 cup sour cream
  • 1/3 cup white wine
  • Salt and pepper to taste

Instructions

  1. . Remove any fat and gristle.
  2. . Season with 1/2 tsp of both salt and pepper.
  3. In a large skillet over medium heat, melt the butter and brown the beef quickly, then push the beef off to one side.  Add the onions and cook slowly for 3 to 5 minutes, then push to the side with the beef.
  4. Stir in the flour into the juices on the empty side of the pan. Pour in beef broth and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.
  5. Five minutes before serving, stir in mushrooms, sour cream, white wine, worcestershire sauce, and garlic. Heat briefly then salt and pepper to taste.

Quick Notes

You can also marinate the beef in the white wine. It makes the beef very tender.
