Who doesn’t like a good Sloppy Joes sandwich especially when it it homemade.  With this recipe you can make it a little spicy or as spicy as you like it.  I am sure your family will enjoy it.

Ingredients
  • 1 tablespoon olive oil
  • ½ cup minced carrot ( or chopped bell pepper or even both)
  • 1 cup chopped onion
  • ½ cup chopped celery
  • 2 cloves garlic, minced
  • Salt to taste
  • 1-1/4 lb ground beef
  • ½ cup ketchup
  • 1 4 ounce can tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 2 tablespoon brown sugar ( I do not use)
  • Pinch ground cloves
  • ½ teaspoon dried thyme
  • Cayenne pepper to taste
  • Black pepper to taste
  • 4 rolls of choice

Instructions
  1. Heat olive oil in a large saute pan on medium high heat.
  2. Add the carrots and saute for 5 minutes.
  3. Add chopped onion and celery.
  4. Cook, stirring occasionally until onions are translucent, about 5 minutes
  5. Add the minced garlic and cook for 30 more seconds.
  6. Remove from heat and remove vegetables from the pan to a bowl, set aside.
  7. Using the same pan, crumble the ground beef and cook until done.
  8. Drain ground beef.
  9. Returned drained cook ground beef to pan and add vegetables.
  10. Add the ketchup, tomato sauce,Worcestershire sauce, vinegar and brown sugar to the pan.
  11. Stir to mix well.
  12. Add ground cloves, thyme, pepper, salt and cayenne pepper.
  13. Lower the heat to medium low and let simmer for 10 minutes
  14. Serve on your favorite roll or bread

This recipe makes 2 meals.  I always freeze the second one for another day when life gets too busy.  It freezes nicely and cooks up well.

Ingredients
  • 1-1/2 pounds uncooked spaghetti
  • 3 pounds ground beef
  • 1 cup chopped onion
  • ⅔ cups chopped green pepper
  • 1 teaspoon minced garlic
  • 2 cans (10-3/4 ounce each) condensed cream of chicken soup
  • 2 cans (10-3/4 ounce each) condensed tomato soup, undiluted
  • 1-1/3 cups water
  • 1 can (8 ounces) mushroom stems and pieces, drained
  • 3 cups ( 12 ounces) shredded cheddar cheese, divided

Instructions
  1. Preheat oven to 350 °.
  2. Grease two 13 x 9 in baking dishes.
  3. Cook spaghetti according to package directions.
  4. Meanwhile, in two large skillets, cook the beef, onion and green pepper over medium heat until meat is no longer pink.
  5. Add garlic and cook for 1 minute longer.
  6. Drain.
  7. Stir in the soups, water and mushrooms.
  8. Drain spaghetti.
  9. Add spaghetti, 1 cup cheese, salt and pepper to beef mixture and mix well.
  10. Transfer to two greased baking dishes.
  11. Sprinkle with remaining cheese.
  12. Bake uncovered for 20 – 25 minutes or until cheese is melted.
  13. Cover and freeze second casserole for up to 3 months.

Notes
To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Baked covered at 350 for 1 hour or until heated through.

Ingredients
  • 1 pound lean ground beef
  • 1 pound Italian sweet sausage, casing removed
  • 2 jars (26 ounce each) spaghetti sauce, divided
  • 2 eggs
  • 2 containers (15 ounce each) ricotta cheese
  • 1 package ( 8 ounce) shredded mozzarella cheese ( 2 cups), divided
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley flakes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 9 lasagna noodles, uncooked
  • ¼ cup fresh grated Parmesan cheese

Instructions
  1. Preheat oven to 350°.
  2. Brown ground beef and sausage in a large skillet on medium heat.
  3. When cooked, drain and return meat mixture to skillet.
  4. Stir into meat mixture, 4 cups of spaghetti sauce.
  5. Beat eggs in large bowl.
  6. Add ricotta cheese, 1-1/2 cups mozzarella cheese, garlic powder, Italian seasoning, parsley, salt and pepper; mix well.
  7. Spread 1 cup of the meat sauce onto the bottom of 13 x 9 baking dish.
  8. Top with 3 noodles.
  9. Spread half of the cheese mixture over the noodles.
  10. Repeat meat sauce, noodles and cheese layer once.
  11. Top with remaining noodles and meat sauce, making sure to cover noodles with sauce. Sprinkle with remaining mozzarella cheese and Parmesan cheese.
  12. Cover with foil and bake for 45 minutes.
  13. Remove foil and bake for 15 minutes longer or until noodles are tender.
  14. Let stand 15 minutes before cutting.
  15. Serve with reserved spaghetti sauce.

Ingredients
  • 1-1/2 cups cubed fully cooked boneless ham
  • 1 cup shredded Swiss Cheese (can use cheddar cheese or any type of cheese)
  • ¼ cup chopped onions
  • ¼ – ½ cup chopped peppers (optional) had them on hand
  • ½ cup Bisquick Mix
  • 1 cup milk
  • ¼ teaspoon salt, if desired
  • ⅛ teaspoon pepper
  • 2 eggs

Instructions
  1. Heat oven to 400°
  2. Grease 9-inche pie plate.
  3. Sprinkle ham, cheese, onions and peppers (if using them) in pie plate.
  4. Stir Bisquick, milk, salt, pepper and eggs until blended.
  5. Pour into greased pie plate.
  6. Bake 35 to 45 minutes or until done.
  7. Cool for 5 minutes before serving.

 

Glazed Corned Beef

Ingredients
  • 3lbs Corned Beef
  • ¼ cup spicy brown mustard
  • 2 tablespoons honey
  • 2 tablespoons brown sugar

Instructions
  1. Mix mustard and honey together, set aside.
  2. Lay corned beef fat side up, on a large piece of aluminum foil in a baking pan.
  3. Evenly spread the mustard mixture over the top (reserve some mixture) and sprinkle brown sugar on top.
  4. Wrap the corned beef with foil, leaving a little space on top between the corned beef and the foil.
  5. Bake for 2 hours at 350°
  6. Open the foil and spread a little more mixture over the top and broil for 2-3 minutes, until top is bubbly and lightly browned.
  7. Let rest for about 10 minutes.
  8. Cut on a cutting board at a diagonal, across the grain of the meat into thin slices.
  9. Enjoy

Ingredients
  • 1 (2 pound pork tenderloin)
  • 1 (1 ounce) envelope dry onion soup mix
  • 1 cup water
  • ¾ cup red wine
  • 3 tablespoons minced garlic
  • 3 tablespoons soy sauce
  • Pepper to taste

Instructions
  1. Place pork tenderloin in a slow cooker with the contents of the soup packet.
  2. Pour water, wine and soy sauce over the top, turning the pork to coat.
  3. Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible.
  4. Sprinkle with pepper.
  5. Cover and cook on low setting for 4 hours.

Notes
Spray slow cooker before putting pork in. This will make clean up easier.

Ingredients
  • 1 cup and 2 tbsp butter
  • 3 cloves garlic, minced
  • 1½ cups dry bread crumbs
  • ½ cup Parmesan cheese
  • 3 tbsp thyme
  • 3 tbsp basil
  • 3 tbsp oregano
  • ¼ pepper
  • ¾ tsp salt
  • 9 (4 ounce) skinless, boneless chicken breast

Instructions
  1. Preheat oven to 350°
  2. Melt the butter with garlic in a saucepan over medium heat.
  3. When the butter starts to bubble, remove from the heat and allow to cool slightly.
  4. Stir the breadcrumb together with the Parmesan cheese, thyme, basil, oregano, pepper and salt.
  5. Dip the chicken breasts in the butter, then press into the seasoned bread crumbs.
  6. Place the chicken into a 9×13 inch baking pan.
  7. Bake 50 to 55 minutes or until done and golden brown.

Notes
Quick Notes[br][br]Can drizzle some butter over chicken before baking or pour extra butter into baking dish to make edges supper crispy.

  • ½ pound ham steak
  • 1 can pineapple rings
  • Brown sugar
  • Cinnamon

Instructions
  1. Preheat oven to 375°
  2. Place ham steak in a shallow pan and place the pineapple slices on top.
  3. Pour the pineapple juice over all.
  4. Bake for 20 minutes uncovered.
  5. After 20 minutes, remove pan from the oven and turn the oven up to broil.
  6. Baste the ham with the pan juices.
  7. Sprinkle a little brown sugar over the pineapple slice and dust with cinnamon.
  8. Return to oven and broil 3 to 5 minutes or until the pineapple is lightly browned.
  9. Serve each ham steak with a pineapple slice.

Ingredients
  • 2 garlic cloves, minced
  • 1 tbsp basil
  • ½ tsp pepper
  • 4 Boneless chicken breast
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • ½ tbsp brown sugar

Instructions
  1. In a small bowl, combine garlic, basil, and pepper; rub all over chicken breast.
  2. In a large shallow dish, blend together oil, soy sauce, lemon juice and brown sugar.
  3. Add the chicken breasts and turn to coat.
  4. Cover and marinated in the refrigerator for at least 2 hours.
  5. Remove chicken from marinade; discard marinade.
  6. Spray grill with cooking spray and preheat to medium.
  7. Add chicken breasts and grill for 5 to 8 minutes.
  8. Turn and continue to grill for another 5 to 8 minutes or until cooked through.

Ingredients
  • 2 eggs slightly beaten
  • 2 cups shredded zucchini, (1 large or 2 small)
  • ⅓ cup bread crumbs
  • ⅓ cup chopped onion
  • 1 tsp salt
  • ¼ tsp pepper
  • ½ tsp oregano
  • 1½ pounds ground beef
  • Topping:
  • 1 tbsp packed brown sugar
  • 2 tbsp ketchup
  • ½ tsp yellow mustard

Instructions
  1. Preheat oven to 350°
  2. In a large bowl, mix all meat loaf ingredients until well blended.
  3. Press mixture into ungreased 91/2 inch deep dish glass pie plate.
  4. Bake for 35 minutes.
  5. Will meatloaf is cooking, mix all topping ingredients.
  6. Remove meat loaf from oven; pour off drippings.
  7. Spread topping over meatloaf.
  8. Return to oven;
  9. Bake 10 to 15 minutes longer or until thoroughly cooked in center.
